Ingredients

  • 2 cups tomatoes, chopped
  • 1 large cucumber, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Chop the tomatoes into bite-sized pieces and slice the cucumber.
  2. Thinly slice the red onion.
  3. In a large bowl, combine tomatoes, cucumber, and red onion.
  4. Crumble feta cheese over the salad.
  5. In a small bowl, whisk together olive oil, lemon juice (or red wine vinegar), oregano, salt, and black pepper.
