Soft, lightly sweet, fruity baked oatmeal cups made with cottage cheese, oats, and mixed berries. These grab-and-go breakfast cups are filling, easy to prepare ahead, and perfect for busy mornings.

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup cottage cheese
  • 1 cup milk
  • 1 egg
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups mixed berries, fresh or frozen

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
  2. Blend the cottage cheese, milk, egg, maple syrup or honey, and vanilla extract until smooth.
  3. In a large bowl, stir together the rolled oats, baking powder, cinnamon, and salt.
  4. Pour the blended wet mixture into the oat mixture and stir until evenly combined.
  5. Gently fold in the mixed berries.
  6. Divide the mixture evenly among the muffin cups.
  7. Bake for 25 to 30 minutes, or until the tops are set and lightly golden.
  8. Allow the oatmeal cups to cool before removing them from the tin so they can firm up properly.
