A light and refreshing lemon quinoa salad with fresh herbs, crisp vegetables, and a bright citrus dressing, perfect as a nourishing side or healthy main dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 green onions, sliced
  • 1 cup cucumber, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the quinoa thoroughly under cold water.
  2. In a saucepan, combine quinoa and water (or broth), bring to a boil.
  3. Reduce heat, cover, and simmer for 12–15 minutes until liquid is absorbed and quinoa is tender.
  4. Remove from heat and let it cool completely.
  5. In a large bowl, combine cooled quinoa, parsley, mint, green onions, and cucumber.
  6. In a small bowl, whisk together lemon juice, lemon zest, olive oil, garlic, salt, and black pepper.
  7. Pour the dressing over the quinoa mixture and toss well to combine.
  8. Let the salad sit for 10–15 minutes before serving for best flavor.
