A fresh and hearty Greek-inspired rice bowl featuring tender marinated chicken, fluffy rice, creamy avocado, and tangy feta for a balanced and flavorful meal.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice
  • 1/2 cup feta cheese, crumbled
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, chopped
  • 1/4 cup red onion, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and black pepper. Add chicken and marinate for at least 20 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until golden and fully cooked through, about 6–8 minutes per side.
  3. Remove the chicken from heat and slice into strips.
  4. Prepare serving bowls with a base of warm cooked rice.
  5. Arrange sliced chicken over the rice.
  6. Add avocado slices, cherry tomatoes, cucumber, and red onion on top.
  7. Sprinkle crumbled feta cheese and fresh parsley over the bowl.
  8. Drizzle extra olive oil or lemon juice if desired and serve immediately.
