A rich and comforting chicken dish cooked in a creamy sun-dried tomato sauce, packed with bold flavors and perfect for an easy yet elegant meal.

Ingredients

  • 4 chicken breasts or thighs
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tsp dried Italian seasoning
  • 2 cups fresh spinach (optional)

Instructions

  1. Season the chicken with salt and black pepper.
  2. Heat olive oil in a pan over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.
  3. In the same pan, melt butter and sauté the garlic until fragrant.
  4. Add the sun-dried tomatoes and cook briefly to enhance their flavor.
  5. Pour in the chicken broth and heavy cream, stirring well to combine.
  6. Let the sauce simmer until it thickens slightly.
  7. Stir in parmesan cheese and Italian seasoning until smooth and creamy.
  8. Add spinach if using, and let it wilt into the sauce.
  9. Return the chicken to the pan, spoon sauce over it, and let it heat through for a couple of minutes.

Notes

  • Add mushrooms for extra depth of flavor.
  • Use less cream and more broth for a lighter version.
  • Add a splash of white wine for extra richness.
  • Serve over pasta, rice, or with vegetables.
  • Reheat gently with a splash of cream or broth to maintain sauce texture.
