Crispy and cheesy quesadillas with a golden cheese crust on the outside, adding extra flavor and crunch. This quick and satisfying dish is easy to customize with your favorite fillings.

Ingredients

  • 4 tortillas
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 tbsp butter or oil
  • Cooked chicken, beans, vegetables, or salsa (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat a pan over medium heat and add butter or oil.
  2. Sprinkle a layer of shredded cheese directly onto the pan.
  3. Let the cheese melt and begin to crisp.
  4. Place a tortilla on top of the melted cheese.
  5. Add more cheese and any desired fillings to one half of the tortilla.
  6. Fold the tortilla over and press gently.
  7. Cook until the cheese forms a crispy golden crust.
  8. Flip and cook the other side until heated through.
  9. Remove from pan, let cool slightly, then slice and serve.

Notes

  • Cheddar works best for a crispy crust, but other cheeses can be used.
  • A nonstick pan helps prevent sticking.
  • Cook over medium heat to avoid burning the cheese.
  • Butter or oil can be skipped as cheese releases its own fat.
  • Add jalapeños or hot sauce for extra heat.
  • Use different cheese blends for more flavor.
  • Store leftovers in the refrigerator for up to 2 days.
  • Reheat in a pan or oven to maintain crispiness.
