A fresh and simple Caprese pasta salad combining tender pasta, juicy tomatoes, creamy mozzarella, and fragrant basil with a light balsamic dressing.

Ingredients

  • 12 oz pasta (penne, fusilli, or other short shapes)
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (or cubed mozzarella)
  • 1/2 cup fresh basil leaves, torn
  • 3 tablespoons olive oil
  • 12 tablespoons balsamic vinegar or balsamic glaze
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Drain and allow the pasta to cool completely.
  3. In a large bowl, combine cooled pasta, cherry tomatoes, mozzarella, and basil.
  4. In a small bowl, whisk together olive oil, balsamic vinegar (or glaze), minced garlic, salt, and black pepper.
  5. Pour the dressing over the salad.
  6. Toss gently until everything is well coated.
  7. Let the salad sit for 15–20 minutes before serving to allow flavors to blend.

Notes

  • Use short pasta shapes for better dressing absorption.
  • Add grilled chicken or shrimp for extra protein.
  • Include olives or parmesan cheese for more flavor.
  • Drizzle balsamic glaze on top for added sweetness.
  • Refresh leftovers with a drizzle of olive oil before serving.
