Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (for chicken)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed greens
  • 1 1/2 cups fresh strawberries, sliced
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup walnuts or pecans
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil (for dressing)

Instructions

  1. Season chicken breasts with olive oil, salt, and black pepper.
  2. Grill or pan-cook over medium heat for 6–7 minutes per side until fully cooked.
  3. Remove from heat, let rest for a few minutes, then slice into strips.
  4. In a large bowl, combine mixed greens, strawberries, cucumber, and red onion.
  5. In a small bowl, whisk together balsamic vinegar, honey, and Dijon mustard.
  6. Slowly drizzle in olive oil while whisking until the dressing is smooth and emulsified.
  7. Top the salad with sliced chicken, feta cheese, and nuts.
  8. Drizzle with dressing and gently toss before serving.
