A refreshing summer salad featuring juicy watermelon, ripe tomatoes, fresh herbs, and a light citrus dressing. This colorful dish balances sweet, savory, and tangy flavors, making it the perfect side for picnics, barbecues, and warm-weather meals.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 3 cups ripe tomatoes, chopped or sliced
  • 1 cucumber, sliced (optional)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp fresh mint leaves, chopped
  • 1/2 cup feta cheese, crumbled (optional)
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice or lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place the cubed watermelon in a large serving bowl.
  2. Add the chopped or sliced tomatoes.
  3. If using cucumber, add the sliced cucumber to the bowl.
  4. Add the thinly sliced red onion, basil leaves, and mint.
  5. In a small bowl, whisk together the olive oil, lime or lemon juice, salt, and black pepper.
  6. Drizzle the dressing over the salad.
  7. Gently toss all ingredients until evenly coated.
  8. Sprinkle crumbled feta cheese over the top if desired.
  9. Serve immediately or chill for 10–15 minutes before serving.

  • For the best texture, assemble the salad shortly before serving.
  • Heirloom, Roma, cherry, or garden tomatoes all work well.
  • Add avocado for extra creaminess and richness.
  • Toasted pistachios or sunflower seeds provide additional crunch.
  • For a Mediterranean variation, add olives and extra feta cheese.
  • The salad may release additional liquid as it sits due to the watermelon.
