Vegan Chickpea Tuna Salad is a quick and refreshing plant-based alternative to classic tuna salad, made with mashed chickpeas, crunchy vegetables, and a creamy, tangy dressing.

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp pickle or relish
  • 1/4 cup vegan mayonnaise
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley or dill, chopped

Instructions

  1. Mash the chickpeas in a bowl using a fork or potato masher, leaving some texture.
  2. Add chopped celery, red onion, and pickle or relish.
  3. Stir in vegan mayonnaise, mustard, lemon juice, salt, and black pepper.
  4. Mix until well combined and creamy.
  5. Fold in fresh herbs and adjust seasoning to taste.
  6. Serve immediately or chill before serving.
