A rustic and hearty Tuscan-style breakfast made with eggs, sautéed vegetables, crusty bread, and herbs, creating a warm and comforting dish.

Ingredients

  • 4 large eggs
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 small onion, chopped
  • 1 cup cherry tomatoes or 1 cup canned tomatoes
  • 2 cups spinach or kale
  • 2 cups rustic bread, sliced or cubed
  • 1/3 cup parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano or thyme
  • Optional: 1/2 cup cooked sausage

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sautéing for 3–4 minutes until soft and fragrant.
  3. Add the tomatoes and cook for 5 minutes until slightly reduced.
  4. Stir in spinach or kale and cook until wilted.
  5. Season with salt, black pepper, and dried oregano or thyme.
  6. Add the bread pieces, stirring to coat and allowing them to absorb the flavors and crisp slightly.
  7. If using sausage, stir it in at this stage.
  8. Create small wells in the mixture and crack the eggs into them.
  9. Cover the skillet and cook for 5–7 minutes, or until eggs are set to your preference.
  10. Sprinkle grated parmesan cheese over the top and serve warm.

  • Use crusty bread for best texture and flavor absorption.
  • Adjust cooking time depending on how you like your eggs.
  • Add extra vegetables like zucchini or bell peppers for variation.
  • Fresh herbs like basil can be used instead of dried for brighter flavor.
