1.5 lbs (700 g) baby potatoes, halved
1 cup parmesan cheese, finely grated
3 tbsp olive oil
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
Instructions
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
In a bowl, mix parmesan cheese, olive oil, minced garlic, salt, black pepper, paprika, and Italian seasoning.
Spread the parmesan mixture evenly onto the prepared baking tray.
Place the halved potatoes cut-side down onto the mixture, pressing lightly so they adhere.
Roast for 30–35 minutes until potatoes are tender and the parmesan forms a golden crust.
Carefully lift the potatoes and serve crust-side up.
Notes
Use parchment paper to prevent sticking and preserve the crust.
