These tahini cookies are soft, chewy, and rich with deep nutty sesame flavor. Made with simple pantry ingredients, they pair beautifully with coffee or tea and can be customized with chocolate chips, sesame seeds, or warm spices for an extra special homemade treat.

Ingredients

  • 1 cup tahini
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sesame seeds (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the tahini, brown sugar, egg, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the tahini mixture and stir until fully combined.
  5. Fold in sesame seeds or chocolate chips if using.
  6. Scoop small portions of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 10 to 12 minutes until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack.
