A bright and tangy Middle Eastern-inspired chicken dish marinated with sumac, garlic, and spices, then cooked until juicy and flavorful.

Ingredients

  • 700g chicken thighs or breasts
  • 2 tablespoons sumac
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 large onion, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • Optional: yogurt for serving

Instructions

  1. In a bowl, mix olive oil, sumac, minced garlic, lemon juice, salt, black pepper, and paprika to create a marinade.
  2. Add the chicken and coat it well with the marinade.
  3. Cover and marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Preheat the oven to 200°C (400°F) or heat a grill or skillet.
  5. Arrange sliced onions in a baking dish and place the marinated chicken on top.
  6. Bake for 30–35 minutes, or until the chicken is fully cooked and slightly golden. Alternatively, grill or pan-cook until nicely charred and cooked through.
  7. Remove from heat and let rest for a few minutes.
  8. Sprinkle with fresh parsley and serve with optional yogurt.

  • Marinating longer enhances flavor significantly.
  • Use bone-in chicken for extra juiciness and flavor.
  • Add vegetables or potatoes to roast alongside the chicken.
  • Adjust cooking time when using chicken breasts to avoid drying.
