700g chicken thighs or breasts
2 tablespoons sumac
3 tablespoons olive oil
3 garlic cloves, minced
2 tablespoons lemon juice
1 large onion, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
2 tablespoons fresh parsley, chopped
Optional: yogurt for serving
Instructions
In a bowl, mix olive oil, sumac, minced garlic, lemon juice, salt, black pepper, and paprika to create a marinade.
Add the chicken and coat it well with the marinade.
Cover and marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
Preheat the oven to 200°C (400°F) or heat a grill or skillet.
Arrange sliced onions in a baking dish and place the marinated chicken on top.
Bake for 30–35 minutes, or until the chicken is fully cooked and slightly golden. Alternatively, grill or pan-cook until nicely charred and cooked through.
Remove from heat and let rest for a few minutes.
Sprinkle with fresh parsley and serve with optional yogurt.
