A refreshing and creamy chicken salad combining juicy chicken, crisp cucumbers, and smoky street corn flavors with a tangy lime dressing.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 medium fresh cucumbers, sliced
  • 1 cup corn kernels (grilled or roasted preferred)
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/3 cup crumbled cotija or feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all ingredients by shredding the chicken, slicing the cucumbers, and cooking the corn if needed.
  2. In a large bowl, whisk together mayonnaise, sour cream (or Greek yogurt), lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
  3. Add the chicken, cucumbers, and corn to the bowl and toss gently until evenly coated.
  4. Fold in the crumbled cheese and chopped cilantro.
  5. Taste and adjust seasoning, adding more lime juice or spices if desired.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
