Ingredients

  • 1 cup rolled oats
  • 1/2 cup freeze-dried strawberries, crushed
  • 4 oz cream cheese, softened
  • 23 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup graham cracker crumbs
  • 1 tablespoon chia seeds (optional)
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Crush the freeze-dried strawberries into a fine powder or small pieces.
  2. In a mixing bowl, blend the cream cheese, honey (or maple syrup), and vanilla extract until smooth.
  3. Add the rolled oats, graham cracker crumbs, crushed strawberries, and chia seeds if using. Mix until a soft dough forms.
  4. Fold in the white chocolate chips.
  5. Scoop small portions and roll into bite-sized balls using your hands.
  6. Place on a tray and refrigerate for at least 30 minutes until firm.
  7. Serve chilled and enjoy.

Notes

  • Avoid fresh strawberries as they add too much moisture.
  • Use dairy-free cream cheese for a vegan option.
  • Add protein powder for extra nutrition, adjusting texture with a splash of milk.
  • Roll bites in coconut flakes or graham crumbs for coating.
  • Chill longer or add more oats if mixture is too soft.
