A creamy and comforting one-pan orzo dish with savory mushrooms, fresh spinach, and rich Parmesan, perfect for a quick and wholesome meal.

Ingredients

  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 2 cups mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1 small onion (chopped)
  • 2 tbsp olive oil
  • 2 1/2 cups vegetable broth
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup heavy cream (optional)
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp dried thyme (optional)

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Sauté chopped onion and garlic until soft and fragrant.
  3. Add sliced mushrooms and cook until they release moisture and become golden brown.
  4. Stir in the orzo and toast for about 1 minute.
  5. Pour in vegetable broth and bring to a simmer.
  6. Cook, stirring occasionally, until orzo is tender and most liquid is absorbed (about 10–12 minutes).
  7. Add fresh spinach and stir until wilted.
  8. Mix in Parmesan cheese and heavy cream if using.
  9. Season with salt, pepper, and dried thyme.
  10. Serve warm.
