Ingredients

  • 2 lbs chicken breasts or chicken thighs
  • 1/3 cup Dijon mustard
  • 2 tablespoons whole grain mustard (optional)
  • 1/3 cup honey
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 small onion, sliced (optional)
  • 1 tablespoon olive oil or butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, whisk together Dijon mustard, whole grain mustard, honey, garlic, chicken broth, salt, pepper, and paprika.
  2. Place chicken in the slow cooker in an even layer.
  3. Add sliced onions if using.
  4. Pour the honey mustard sauce over the chicken, coating evenly.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and fully cooked.
  6. Remove chicken if desired and shred or keep whole.
  7. Stir the sauce and let it thicken slightly, or reduce it on the stove for a richer consistency.
  8. Serve chicken with sauce spooned over the top.
  9. Garnish with fresh parsley before serving.
