Ingredients

  • 1 large romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup black olives
  • 1/4 cup pepperoncini peppers
  • 1/4 cup parmesan cheese, shaved or grated
  • 1 cup croutons
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the chopped romaine lettuce into a large salad bowl.
  2. Add the cherry tomatoes, cucumber, red onion, black olives, and pepperoncini peppers.
  3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
  4. Drizzle the dressing over the salad.
  5. Toss gently until all the ingredients are evenly coated.
  6. Top with parmesan cheese and croutons just before serving.
  7. Serve immediately while the vegetables remain crisp and fresh.
