A simple and flavorful sheet pan meal featuring tender salmon glazed with a sweet and tangy maple Dijon sauce, paired with roasted vegetables.

Ingredients

  • 4 salmon fillets
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups mixed vegetables (broccoli, carrots, or green beans)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, soy sauce, olive oil, and lemon juice to make the glaze.
  3. Arrange the vegetables on a sheet pan and toss with a little olive oil, salt, and pepper.
  4. Roast the vegetables for 10–15 minutes.
  5. Remove the pan from the oven and place the salmon fillets on or beside the vegetables.
  6. Brush or spoon the maple Dijon glaze generously over the salmon.
  7. Return the pan to the oven and bake for 12–15 minutes until the salmon is cooked through and flakes easily.
  8. Optional: Spoon extra glaze over the salmon before serving.

Notes

  • Add chili flakes for a sweet and spicy variation.
  • Use whole grain mustard for extra texture and depth.
  • Substitute maple syrup with honey if desired.
  • Add orange zest for a citrus twist.
  • Reheat gently in the oven to maintain texture.
