Roasted Carrots with Whipped Feta is a simple yet elegant side dish featuring caramelized sweet carrots paired with a creamy, tangy whipped feta spread.

Ingredients

  • 1 lb (450 g) carrots, peeled and cut
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp honey
  • 1 tbsp fresh thyme or parsley, chopped
  • For the whipped feta:
  • 200 g feta cheese
  • 1/4 cup Greek yogurt or cream cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the carrots with olive oil, salt, and black pepper, then spread evenly on a baking tray.
  3. Roast for 25–30 minutes until tender and caramelized, drizzling honey over the last 5 minutes.
  4. In a blender or food processor, combine feta, Greek yogurt (or cream cheese), olive oil, lemon juice, and black pepper. Blend until smooth and creamy.
  5. Spread the whipped feta onto a serving plate.
  6. Top with the warm roasted carrots.
  7. Garnish with fresh herbs and serve.

  • Do not overcrowd the pan to ensure proper roasting.
  • Use goat cheese as an alternative to feta for a similar tang.
  • Add chili flakes for a spicy kick.
  • Top with toasted nuts or seeds for added crunch.
