Ingredients

  • 2 medium zucchini, grated
  • 1 cup cherry tomatoes, diced
  • 1/2 cup feta cheese, crumbled
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 2 green onions, sliced
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. Grate the zucchini and squeeze out as much excess moisture as possible using a clean kitchen towel.
  2. Place the zucchini in a large mixing bowl.
  3. Add the diced cherry tomatoes, feta cheese, eggs, flour, green onions, garlic, parsley, salt, and black pepper.
  4. Mix everything together until well combined.
  5. Heat the olive oil in a skillet over medium heat.
  6. Scoop small portions of the mixture into the skillet and flatten them slightly with a spoon.
  7. Cook the fritters for 3 to 4 minutes per side until golden brown and crispy.
  8. Transfer the cooked fritters to a paper towel-lined plate to remove excess oil.
  9. Serve warm with yogurt, tzatziki, sour cream, or a fresh salad.
