A quick and healthy tilapia dish simmered in a rich, slightly smoky roasted red pepper sauce with a creamy finish and bright lemon flavor.

Ingredients

  • 4 tilapia fillets
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 cup roasted red peppers (jarred or fresh)
  • 1/2 cup heavy cream or half-and-half
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Season the tilapia fillets with salt, black pepper, and paprika.
  2. Heat olive oil in a skillet over medium heat and cook the tilapia for 3–4 minutes per side until flaky and opaque. Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant.
  4. Add roasted red peppers and cook briefly, then blend into a smooth sauce or mash for a rustic texture.
  5. Pour in heavy cream or half-and-half and stir, letting the sauce simmer until slightly thickened.
  6. Add lemon juice and mix well.
  7. Return the tilapia to the skillet and spoon the sauce over the fillets.
  8. Let everything heat through for 2–3 minutes.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Use jarred roasted peppers for convenience or roast fresh peppers for deeper flavor.
  • Substitute tilapia with cod, haddock, or other mild white fish.
  • Add spinach or mushrooms for extra texture and nutrition.
  • Use coconut milk for a dairy-free alternative.
  • Reheat gently to avoid overcooking the fish.
