Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh basil or parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup feta cheese or mozzarella pearls (optional)

Instructions

  1. Place the halved cherry tomatoes, cucumber slices, and red onion into a large mixing bowl.
