Soft, moist, and naturally sweet banana muffins made with simple ingredients, perfect for a quick breakfast, snack, or light dessert.

Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth.
  3. Add melted butter, sugar, brown sugar, eggs, milk, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring just until combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool slightly before serving.

  • Substitute part of the flour with whole wheat flour for a healthier option.
