Refreshing no-bake lemon coconut energy balls made with oats, coconut, almond butter, and bright citrus flavor. These healthy snack bites are naturally sweet, chewy, and perfect for meal prep or busy days.

Ingredients

  • 1 cup rolled oats
  • 1 cup shredded coconut
  • 1/2 cup almond butter or cashew butter
  • 1/3 cup honey or maple syrup
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • Pinch of salt
  • Extra shredded coconut for coating (optional)

Instructions

  1. Add the rolled oats, shredded coconut, and chia seeds to a large mixing bowl.
  2. Stir in the almond butter, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt.
  3. Mix everything together until fully combined.
  4. Place the mixture in the refrigerator for about 15 minutes to make rolling easier.
  5. Roll the chilled mixture into small balls using your hands.
  6. Coat the energy balls with extra shredded coconut if desired.
  7. Store the energy balls in the refrigerator until ready to serve.
