Flavorful and hearty mushroom tacos made with sautéed mushrooms, warm tortillas, and fresh toppings for a quick and satisfying meat-free meal.

Ingredients

  • 400g mushrooms (cremini or button), sliced
  • 68 tortillas (corn or flour)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 avocado, sliced (optional)
  • 1/4 cup sour cream or yogurt (optional)

Instructions

  1. Clean and slice the mushrooms into even pieces.
  2. Heat olive oil in a pan over medium-high heat.
  3. Sauté the chopped onion until softened.
  4. Add minced garlic and cook for about 1 minute.
  5. Add the mushrooms and cook until they release moisture and begin to brown.
  6. Season with cumin, paprika, salt, and black pepper, and cook until slightly caramelized.
  7. Warm the tortillas in a dry pan or over a flame.
  8. Fill each tortilla with the mushroom mixture.
  9. Squeeze fresh lime juice over the filling.
  10. Top with chopped cilantro and optional toppings like avocado and sour cream.
  11. Serve immediately.
