A comforting and flavorful Mediterranean one pot pasta where everything cooks together, creating a rich, aromatic dish with minimal cleanup.

Ingredients

  • 300g pasta (spaghetti or penne)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cups vegetable or chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups spinach or kale
  • 100g feta cheese, crumbled
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the chopped onion and minced garlic until fragrant and softened.
  2. Add pasta, cherry tomatoes, broth, oregano, salt, and black pepper to the pot.
  3. Bring to a boil, then reduce heat and simmer, stirring occasionally to prevent sticking.
  4. Cook until the pasta is tender and most of the liquid is absorbed, about 10–15 minutes.
  5. Add spinach or kale and stir until wilted.
  6. Remove from heat and crumble feta cheese over the top.
  7. Garnish with fresh basil or parsley and serve warm.

Notes

  • Stir occasionally to prevent pasta from sticking together.
  • Add a splash of broth when reheating to loosen the sauce.
  • Customize with additional vegetables like zucchini or bell peppers.
  • For a vegan version, omit feta or use a plant-based alternative.
