These Mediterranean Crostini are a fresh and flavorful appetizer featuring crispy toasted baguette slices topped with a vibrant mixture of tomatoes, cucumber, olives, feta cheese, herbs, and lemon. Perfect for entertaining, parties, or a light snack, they deliver Mediterranean-inspired flavor in every bite.

Ingredients

  • 1 baguette, sliced into 24 pieces
  • 2 tbsp olive oil, plus extra for brushing
  • 1 cup cherry tomatoes, diced
  • 1 cup cucumber, finely diced
  • 1/2 cup Kalamata olives, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and lightly brush both sides with olive oil.
  3. Toast in the oven for 8–10 minutes, or until golden brown and crisp.
  4. Remove from the oven and allow the crostini to cool slightly.
  5. In a mixing bowl, combine the diced tomatoes, cucumber, Kalamata olives, red onion, feta cheese, parsley, and basil.
  6. Add the minced garlic, lemon juice, salt, and black pepper.
  7. Gently toss until all ingredients are evenly combined.
  8. Spoon the Mediterranean mixture onto each toasted crostini.
  9. Serve immediately to maintain the crisp texture of the bread.
