Loaded mashed potato bites are crispy, bite-sized snacks made from creamy mashed potatoes mixed with cheese and green onions, then baked or fried until golden. They are fluffy inside, crunchy outside, and perfect as an appetizer or side dish.

Ingredients

  • 2 cups mashed potatoes (cold and firm)
  • 1 large egg
  • 1/3 cup all-purpose flour or breadcrumbs (plus extra for coating)
  • 3/4 cup shredded cheddar cheese
  • 3 tablespoons green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Oil for frying or cooking spray for baking
  • Optional: sour cream for serving

Instructions

  1. Ensure mashed potatoes are cold and firm for easy shaping.
  2. In a bowl, mix mashed potatoes, egg, cheddar cheese, green onions, salt, pepper, and garlic powder until well combined.
  3. Scoop and roll mixture into small bite-sized balls.
  4. Lightly coat each ball in flour or breadcrumbs.
  5. To bake: place on a lined tray and bake at 200°C (400°F) for 15–20 minutes until golden and crisp, turning halfway if needed.
  6. To fry: heat oil and fry until evenly golden and crispy on all sides.
  7. Let rest for a few minutes after cooking to help them firm up.
  8. Serve warm with sour cream or your favorite dipping sauce.

  • Add extra breadcrumbs if the mixture feels too soft.
