Ingredients

  • 600g chicken breast or chicken thighs
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano or thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 cups cooked rice, quinoa, or roasted vegetables (for serving)

Instructions

  1. In a bowl, mix lemon juice, lemon zest, minced garlic, olive oil, oregano, salt, black pepper, and paprika to create the marinade.
  2. Add the chicken and coat well with the marinade.
  3. Marinate for at least 30 minutes, preferably a few hours for deeper flavor.
  4. Preheat the oven to 200°C (400°F) or heat a skillet over medium-high heat.
  5. Cook the chicken until golden on the outside and fully cooked through, about 20–25 minutes in the oven or 10–15 minutes in a skillet.
  6. Remove from heat and let the chicken rest for a few minutes.
  7. Slice the chicken into portions.
  8. Divide into meal prep containers and add rice, quinoa, or roasted vegetables.

  • Do not overcook the chicken to keep it juicy.
  • Chicken thighs provide more flavor, while breasts are leaner.
  • Add chili flakes for heat or a bit of honey for sweetness.
