Juicy lemon-marinated chicken skewers grilled to perfection and served with a creamy feta yogurt sauce for a fresh, flavorful, and satisfying meal.

Ingredients

  • 2 pounds chicken breast or chicken thighs, cut into bite-sized pieces
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup feta cheese
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil (for sauce)

Instructions

  1. Place the chicken pieces in a large bowl.
  2. In a separate bowl, whisk together the lemon juice, lemon zest, olive oil, garlic, oregano, salt, and black pepper.
  3. Pour the marinade over the chicken and toss well to coat evenly.
  4. Cover and marinate the chicken for at least 30 minutes.
  5. Thread the marinated chicken pieces onto skewers.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Cook the skewers for 10 to 12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.
  8. While the chicken cooks, blend the feta cheese, Greek yogurt, fresh dill, and olive oil until smooth and creamy.
  9. Serve the warm chicken skewers with the creamy feta sauce on the side or drizzled over the top.
