A light and refreshing lemon and parsley rice dish with bright citrus flavor and fresh herbs, perfect as a versatile side for many meals.

Ingredients

  • 1 cup long grain rice (basmati or jasmine)
  • 2 cups water or broth
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil or butter in a pot over medium heat and sauté the minced garlic until fragrant.
  3. Add the rice and stir for about 1 minute to lightly toast it.
  4. Pour in the water or broth and add salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15–20 minutes until the rice is tender and liquid is absorbed.
  6. Turn off the heat and let the rice sit covered for a few minutes.
  7. Fluff the rice with a fork.
  8. Stir in lemon juice, lemon zest, chopped parsley, and black pepper before serving.

Notes

  • Rinsing the rice helps keep grains separate and fluffy.
  • Use broth instead of water for more flavor.
  • Fresh parsley gives the best taste, but dried can be used in smaller amounts.
  • Add green onions or cilantro for extra freshness.
  • Butter can be used instead of olive oil for a richer flavor.
