A soft and fragrant cake infused with delicate lavender and topped with juicy peaches, creating a light yet indulgent dessert with a floral and fruity twist.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp dried culinary lavender
  • 1 tsp vanilla extract
  • 2 peaches, sliced (fresh or canned)
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 180°C (350°F) and grease and line an 8-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Warm the milk gently and steep lavender in it for 5–10 minutes, then strain.
  6. Add the infused milk, vanilla extract, and lemon zest to the batter, alternating with dry ingredients until combined.
  7. Pour batter into prepared pan and arrange peach slices on top.
  8. Bake for 35–40 minutes until golden and a toothpick inserted in the center comes out clean.
  9. Let cool before slicing and serving.

  • Use culinary-grade lavender to ensure safe and pleasant flavor.
  • Do not over-infuse lavender to avoid bitterness.
  • Fresh peaches provide the best flavor when in season.
  • Optional glaze can be added for extra sweetness.
