Soft and chewy mojito-inspired sugar cookies bursting with fresh lime and cool mint, finished with a tangy citrus glaze for a refreshing twist.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tbsp lime zest
  • 2 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • 2 tbsp fresh mint leaves (finely chopped)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp lime juice (for glaze)
  • 1 tsp lime zest (for glaze)
  • 1 tbsp finely chopped mint (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg, lime zest, lime juice, and vanilla extract, mixing well.
  5. Fold in finely chopped mint leaves.
  6. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  7. Scoop dough onto the baking sheet, spacing cookies apart.
  8. Bake for 10–12 minutes until edges are lightly golden and centers remain soft.
  9. Cool cookies completely on a rack.
  10. Prepare glaze by mixing powdered sugar, lime juice, and zest until smooth, then stir in mint.
  11. Drizzle glaze over cooled cookies and let set before serving.

  • Use fresh lime juice for the best flavor.
  • Do not overbake to keep cookies soft and chewy.
  • Muddle mint with a little sugar for stronger flavor if desired.
