Sweet and spicy Jalapeno Peach Chicken made with tender chicken simmered in a rich peach glaze with fresh jalapeños, garlic, honey, and lime. This flavorful skillet meal is perfect for weeknight dinners or special occasions.

Ingredients

  • 1 1/2 pounds boneless chicken breasts or thighs
  • 2 fresh peaches, diced
  • 2 jalapeños, sliced
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken with salt, black pepper, paprika, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for 5-7 minutes per side until golden brown and fully cooked. Remove from the skillet and set aside.
  4. In the same skillet, sauté the garlic and sliced jalapeños for 1 minute until fragrant.
  5. Add the diced peaches, honey, soy sauce, and lime juice to the skillet.
  6. Simmer the peach mixture for 5-7 minutes until the peaches soften and the sauce thickens slightly.
  7. Stir in the cornstarch slurry if a thicker glaze is desired.
  8. Return the chicken to the skillet and coat it well in the peach jalapeño sauce.
  9. Garnish with fresh parsley before serving.

Notes

  • Canned peaches may be used if fresh peaches are unavailable. Drain them well before using.
  • Remove the jalapeño seeds for a milder spice level.
  • Grill the chicken for a smoky flavor variation.
  • Add onions or red bell peppers for extra texture and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
