Honey BBQ Chicken & Garlic Parmesan Potatoes

A hearty and flavorful meal featuring sweet and smoky honey BBQ chicken paired with crispy garlic parmesan potatoes, perfect for a comforting dinner.

Ingredients

  • 600g chicken thighs or chicken breast
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 500g potatoes, cut into bite-sized pieces
  • 1/3 cup grated parmesan cheese
  • 1 tsp dried oregano or Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the potatoes with olive oil, half of the minced garlic, oregano, salt, pepper, and half of the parmesan cheese.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  5. In a bowl, mix BBQ sauce and honey.
  6. Season the chicken with salt, pepper, paprika, and remaining garlic.
  7. Cook the chicken in a pan over medium heat or bake in the oven until nearly cooked through.
  8. Brush the honey BBQ sauce over the chicken and cook for an additional 5–7 minutes until caramelized.
  9. Remove potatoes from the oven and sprinkle with remaining parmesan cheese.
  10. Serve the chicken alongside the garlic parmesan potatoes.
