These Herb Baked Sweet Onions are tender, buttery, and full of rich savory flavor. Slowly baked with herbs, garlic, and butter, the onions become naturally sweet and comforting, making them the perfect side dish for roasted meats, holiday dinners, or cozy family meals.

Ingredients

  • 4 large sweet onions
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel the onions and slice a small portion from the tops and bottoms so they sit flat.
  3. Place the onions in a baking dish and drizzle with olive oil.
  4. In a small bowl, combine the thyme, rosemary, parsley, garlic powder, salt, and black pepper.
  5. Sprinkle the herb mixture evenly over the onions.
  6. Place small pieces of butter on top of each onion.
  7. Cover the baking dish with foil and bake for 45 minutes.
  8. Remove the foil, sprinkle Parmesan cheese on top if using, and bake for an additional 15 minutes until golden and tender.
  9. Serve warm with the flavorful juices spooned over the onions.

Notes

  • Sweet onions like Vidalia or Walla Walla work best for this recipe.
  • Fresh herbs can replace dried herbs for a brighter flavor.
  • Add breadcrumbs during the last few minutes for a crispy topping.
  • A splash of balsamic vinegar adds extra depth and sweetness.
  • Gruyère or mozzarella cheese can be used for a richer cheesy finish.
