Ingredients

  • 4 medium fresh zucchini
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley or basil, chopped (optional)
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash the zucchini and slice it lengthwise into 1/4-inch thick planks or cut into thick rounds.
  3. Place the zucchini in a large bowl and drizzle with olive oil.
  4. Season with garlic powder, salt, and black pepper.
  5. Toss until the zucchini is evenly coated.
  6. Arrange the zucchini on the hot grill in a single layer.
  7. Grill for 3–4 minutes per side, or until tender and grill marks appear.
  8. Remove the zucchini from the grill and transfer to a serving platter.
  9. Drizzle with fresh lemon juice.
  10. Garnish with chopped herbs and grated Parmesan cheese if desired, then serve warm.
