A unique and refreshing summer dish featuring juicy watermelon lightly charred on the grill to enhance its natural sweetness. Finished with lime juice, sea salt, fresh mint, and optional feta or balsamic glaze, this versatile recipe works as an appetizer, side dish, or light dessert.

Ingredients

  • 6 cups seedless watermelon, cut into thick wedges or slices
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1/4 tsp sea salt
  • 2 tbsp fresh mint leaves, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1 tbsp balsamic glaze (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the watermelon into thick wedges or slices that are sturdy enough to handle on the grill.
  3. Lightly brush both sides of the watermelon with olive oil.
  4. Place the watermelon directly on the grill grates.
  5. Grill for 2–3 minutes per side, or until distinct grill marks appear.
  6. Carefully remove the watermelon from the grill and transfer it to a serving platter.
  7. Drizzle with fresh lime juice.
  8. Sprinkle with sea salt and chopped mint leaves.
  9. Top with crumbled feta cheese and/or balsamic glaze if desired.
  10. Serve immediately while slightly warm or at room temperature.
