A fresh and flavorful grilled lemon herb chicken made with a zesty citrus marinade and aromatic herbs, resulting in juicy, tender chicken perfect for a light and satisfying meal.

Ingredients

  • 4 chicken breasts or thighs
  • 3 tbsp olive oil
  • 3 garlic cloves (minced)
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tsp dried oregano or thyme
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt, black pepper, and dried herbs to create the marinade.
  2. Coat the chicken evenly with the marinade and let it sit for at least 30 minutes (or longer for more flavor).
  3. Preheat the grill to medium-high heat.
  4. Place the chicken on the grill and cook for 5–7 minutes per side, depending on thickness, until fully cooked and lightly charred.
  5. Remove the chicken from the grill and let it rest for a few minutes.
  6. Garnish with fresh parsley and serve.

Notes

  • Add yogurt to the marinade for extra tenderness.
  • Use smoked paprika or chili flakes for additional flavor.
  • Chicken thighs provide a juicier result than breasts.
  • Can be cooked in a pan or oven if a grill is not available.
  • Marinate longer (up to a few hours) for deeper flavor.
