Ingredients
4 ears fresh corn on the cob
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt, to taste
Black pepper, to taste
For the spicy dipping sauce:
1/2 cup mayonnaise
1–2 tbsp hot sauce
1 tbsp lime juice
1 tsp honey
1/2 tsp chili powder or cayenne

Instructions
Carefully cut each corn cob into quarters lengthwise to create rib-like strips.
Brush corn ribs with olive oil and season with smoked paprika, garlic powder, salt, and black pepper.
Preheat a grill to medium-high heat.
Place corn ribs on the grill and cook for 10–15 minutes, turning occasionally until tender, slightly charred, and curled.
In a bowl, whisk together mayonnaise, hot sauce, lime juice, honey, chili powder or cayenne, and salt until smooth.
Remove corn ribs from the grill and serve hot with the spicy dipping sauce on the side.

Use a sharp knife and stable surface when cutting corn.
