Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/3 cup kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon lemon juice (for dressing)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
  2. Add the chicken breasts and marinate for 20–30 minutes.
  3. Preheat grill to medium heat and cook chicken for 6–7 minutes per side until fully cooked.
  4. Remove chicken from grill and let it rest for a few minutes, then slice into strips.
  5. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and kalamata olives.
  6. Top the salad with sliced grilled chicken and crumbled feta cheese.
  7. Drizzle with olive oil and lemon juice dressing.
  8. Toss gently and serve immediately.
