Crispy golden fries tossed with garlic, oregano, feta cheese, fresh herbs, and a squeeze of lemon for a vibrant Mediterranean-inspired dish.

Ingredients

  • 4 large potatoes, cut into thin fries
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh lemon juice

Instructions

  1. Cut the potatoes into thin fries and soak them in cold water for 10–15 minutes to remove excess starch.
  2. Drain and dry the potatoes thoroughly using a clean towel.
  3. Toss the fries with olive oil, salt, and black pepper.
  4. Bake in a preheated oven at 220°C (425°F) for 30–40 minutes, flipping halfway through, or fry until golden and crispy.
  5. Immediately toss the hot fries with minced garlic and dried oregano.
  6. Transfer to a serving dish and sprinkle with crumbled feta cheese and chopped parsley.
  7. Finish with a squeeze of fresh lemon juice and serve immediately.

  • Do not overcrowd the baking tray to ensure crispy fries.
