Crispy gluten-free taquitos filled with creamy, spicy buffalo chicken, baked to golden perfection for a satisfying and flavorful snack or meal.

Ingredients

  • 1012 gluten free tortillas
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray
  • 2 tablespoons green onions, chopped (optional)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix shredded chicken, buffalo sauce, cream cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper until creamy and well combined.
  3. Warm the gluten free tortillas slightly to make them flexible.
  4. Place a portion of the filling along one side of each tortilla.
  5. Roll each tortilla tightly into a taquito and place seam-side down on the baking sheet.
  6. Lightly spray the tops with olive oil.
  7. Bake for 15–20 minutes until golden and crispy.
  8. Remove from oven and let cool slightly.
  9. Garnish with chopped green onions if desired and serve with dipping sauce.

Notes

  • Warm tortillas before rolling to prevent cracking.
  • Adjust buffalo sauce to control spice level.
  • Can be made ahead and frozen before baking.
  • Reheat in oven or air fryer for best crispiness.
  • Serve with ranch, blue cheese, or extra buffalo sauce.
