Garlic Shrimp Crostini with Avocado is an elegant yet easy appetizer featuring crispy toasted baguette slices topped with creamy avocado spread and savory garlic shrimp. Ingredients

  • 1 baguette, sliced into 24 pieces
  • 2 tbsp olive oil, divided
  • 1 lb (450 g) medium or large shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 2 ripe avocados, mashed
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper, divided
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and brush lightly with 1 tablespoon olive oil.
  3. Bake for 8–10 minutes or until golden brown and crisp. Set aside to cool.
  4. In a bowl, mash the avocados with lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until smooth and creamy.
  5. Heat the remaining 1 tablespoon olive oil in a skillet over medium heat.
  6. Add the minced garlic and cook for about 30 seconds until fragrant.
  7. Add the shrimp and cook for 2–3 minutes per side, or until pink and fully cooked.
  8. Season the shrimp with the remaining salt, black pepper, and optional red pepper flakes.
  9. Spread a generous layer of avocado mixture onto each crostini.
  10. Top each crostini with one or two garlic shrimp.
  11. Garnish with fresh parsley and serve immediately.
