Ingredients

  • 2 cups fresh corn kernels
  • 2 ripe peaches, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 jalapeño, finely diced (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the corn briefly in boiling water or on the grill until tender, then let it cool completely.
  2. In a large bowl, combine the corn kernels, diced peaches, and chopped red onion.
  3. Add the chopped mint and jalapeño if using.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salsa and toss gently until evenly coated.
  6. Chill the salsa for about 15 minutes before serving to allow the flavors to blend.
  7. Serve with tortilla chips or as a topping for grilled chicken, fish, or tacos.
