A light and refreshing berry quinoa salad with fluffy grains, sweet fresh berries, and a bright lemon dressing, perfect for a nourishing and colorful dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water or broth
  • 1 cup fresh strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries or blackberries
  • 2 tbsp fresh mint or basil, chopped
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1/4 tsp salt

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. Cook quinoa with water or broth according to package instructions, about 15 minutes.
  3. Let the quinoa cool completely.
  4. Wash and slice the berries.
  5. Finely chop the fresh herbs.
  6. In a small bowl, whisk together lemon juice, lemon zest, honey or maple syrup, olive oil, and salt.
  7. In a large bowl, combine cooled quinoa, berries, and herbs.
  8. Pour dressing over the salad and gently toss to combine.
  9. Chill for 15–30 minutes before serving for best flavor.
