A warm and savory phyllo pastry filled with sweet caramelized onions and gooey melted cheese, baked until golden and flaky. This comforting dish combines crispy buttery layers with rich savory filling for an elegant appetizer, snack, or light meal.

Ingredients

  • 8 phyllo pastry sheets
  • 3 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 cup mozzarella cheese, shredded
  • 1 cup gruyère or cheddar cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon fresh thyme or parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten for brushing

Instructions

  1. Heat butter and olive oil in a skillet over medium-low heat.
  2. Add the sliced onions and cook slowly until deeply golden and caramelized, about 25 to 30 minutes.
  3. Stir in the minced garlic and cook for 1 additional minute until fragrant.
  4. Remove the onions from the heat and allow them to cool slightly.
  5. Mix the onions with mozzarella, gruyère or cheddar, parmesan cheese, and fresh herbs.
  6. Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
  7. Layer the phyllo sheets, lightly brushing each sheet with melted butter or oil.
  8. Spoon the onion and cheese mixture onto the pastry and fold or roll into the desired shape.
  9. Brush the top with beaten egg.
  10. Bake for 25 to 30 minutes until crisp, flaky, and golden brown.
  11. Allow the pastry to cool slightly before slicing and serving warm.

Notes

  • Keep unused phyllo sheets covered with a damp towel to prevent drying out.
  • Cook onions slowly for the best deep caramelized flavor.
  • Goat cheese or blue cheese can add a sharper flavor variation.
  • Sesame seeds or everything bagel seasoning make excellent toppings.
