Crispy phyllo pastry rolls filled with creamy, tangy feta cheese and drizzled with sweet and spicy chili honey for a bold and irresistible appetizer.

Ingredients

  • 200g feta cheese
  • 810 phyllo pastry sheets
  • 3 tablespoons olive oil or melted butter
  • 1/3 cup honey
  • 1 teaspoon red chili flakes (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Cut the feta cheese into small rectangular blocks.
  3. Lay out a sheet of phyllo pastry and lightly brush it with olive oil or melted butter.
  4. Fold the pastry to create a slightly thicker layer.
  5. Place a piece of feta at one end and roll tightly, folding in the sides to seal.
  6. Repeat with remaining ingredients and place rolls seam-side down on the tray.
  7. Brush the tops with more oil or butter and sprinkle sesame seeds if desired.
  8. Bake for 20–25 minutes until golden and crisp.
  9. In a small saucepan, gently warm the honey and stir in chili flakes and black pepper.
  10. Remove rolls from oven, let cool slightly, then drizzle with spicy chili honey or serve it on the side.

Notes

  • Handle phyllo pastry gently to prevent tearing.
  • Adjust chili flakes to control spice level.
  • Best served fresh for maximum crispiness.
  • Can substitute feta with goat cheese or ricotta for variation.
  • Avoid microwaving when reheating to keep pastry crisp.
